Long Time… Here’s a Muffin!

Wow, it’s been a long time since I’ve posted. I have a new baby now! An adorable little boy lovingly dubbed Sir Blapsalot due to his propensity to spit up on any clean surface around him.

Mr. Bubbles loves his little brother (A little too much for his mama’s sanity.) He dotes on him, bringing him his passy, letting me know that I need to feed him or change his diaper, and piling burp cloths on the poor baby to “help” clean up his messes.

Mr. Bubbles spends the mornings with his Ama so that I can catch up on the sleep I lose every night nursing Sir Blapsalot. I want to make mornings a little easier on her so I decided to make some breakfast muffins so she can just serve him one and finish her coffee.

These started off as carrot cake muffins, but I tweaked them so much that they evolved into their own recipe. I have no clue how they taste as I can’t eat them, but Mr. Bubbles gobbles them like they are candy even while trying to be picky. So now I present:

Sneaky Muffins!

2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1/2 cup whole milk (almond milk works as well)
1/4 cup olive oil
1/3 cup honey
1 teaspoon vanilla
2 eggs
2 Tablespoons lemon juice
1 1/2 cups shredded carrots
1 1/2 cup shredded zucchini
1/2 cup raisins
1/2 cup chopped nuts

Mix first four ingredients together and set aside. In a separate bowl, combine the remaining ingredients. Stir the contents of both bowls together until just combined. Spoon batter into a muffin tin, filling each cup completely. Bake at 350 degrees Fahrenheit for twenty minutes or until a toothpick inserted in the center of a muffin comes out clean.

So Glad I Looked!

My mom has a chronic illness and many, many, many allergies related to that illness. Because of that, she has a very limited diet.

Today is my dad’s birthday so I made a pound cake for Hubby and him, and a gluten free spice cake for Mr. Bubbles and me. Unfortunately, my mom can’t have either because of her allergies.

So, I decided to snoop around the internet to see if I could find something she could have to join in on the celebration. And I found something! It’s gluten free, dairy free, egg free, soy free, nut free, and every other “free” she needs! I altered this recipe to make it with honey instead of sugar so it would be easier on her blood sugar, and because I don’t have any maple sugar on hand.

Now, if you make these, and you aren’t used to gluten free, natural sugar recipes, you aren’t going to like them right away. They are mildly sweet and you have to chew them pretty well in order to really get the sweetness. But if you haven’t had a cookie in goodness knows how long, you will love them!

My alterations include:

Omitting the chocolate chips because she doesn’t like chocolate chip cookies
Replacing the sugar with an equal amount of honey
Adding a handful of old fashioned oats to make up for the extra moisture and to add a bit of texture

My mama is happy and I am happy that she is happy. I’m so glad I looked!

(Also, my arugula is big enough to harvest a bit of to go with Papa’s birthday supper.)

Being Realistic

Mr. Bubbles ate chicken nuggets for the first time today. The Wal-Mart near me started carrying gluten free chicken nuggets, so of course I snagged a bag because I haven’t had a chicken nugget in several years. I can’t help but feel guilty about feeding my child junk food, but sometimes it’s okay.

Pregnancy brain makes the already hard task of grocery shopping near impossible so by the time I got home I was exhausted. I still went out in the garden for a few minutes and tried to help Mama with the dishes so by the time supper rolled around I was done and ready for bed.

But it took less than ten minutes to heat some frozen veggies on the stove and toss some chicken nuggets into the toaster oven. Not a perfect meal, but a meal nonetheless. Mr. Bubbles of course helped me to not feel overly guilty by eating all of his veggies first and then asking for seconds on only the vegetables.

Sometimes being a good parent is just doing the best you can.

Persistant Little Thing

The cat likes to use my radish bed as a dust bath. Most of the radishes died, but a few are hanging on despite being regularly crushed. In fact, one is actually trying to grow the root bulb! If it can hang on a little longer I might be able to harvest it this week and get the first official harvest out of my garden! Yay!

Most of everything else I planted seems to be doing okay, though they don’t have to really deal with being sat on by a cat. I have beans, corn, zucchini, squash, watermelon, sunflowers, peas, arugula, turnips, and some bell peppers all growing nicely. A little weed control and I might get a decent return on my work in a few months.

Plans!

Today Hubby picked up some hay bales so that he can mulch the garden for me. While we were at the feed store to get the hay we saw that the baby chickens had come in so next week we will be picking up a batch of them. I’m very excited!

I had a doctor appointment today to get an ultrasound on the new baby. He is doing great, and is going to be quite big. The tech said most likely about nine pounds. Ouch. Poor kid has his mama’s feet too so keeping him in shoes is going to be a trial.

Well, I got some okra planted as well as some more beans and watermelon. You can never have too much watermelon, and I can go through some fried okra. Mmmm… fried okra. I also figured out where I want to put my asparagus bed! I just need to get some bricks to edge it out…

Whoops!

I seem to have not posted anything last week. I’ll be honest and say I completely forgot about updating my blog. But I’m back!

My garden is coming along beautifully. The corn and squash have sprouted, some of the turnips and beets have decided to show their heads, and the arugula is determined to survive that stupid cat. I need to get some hay so I can mulch to help keep the ground cool and preserve water, but that should be happening soon.

Live Long and Prosper

Leonard Nimoy died this morning. When I saw the news pop up on my Facebook feed I immediately opened a new tab to search and verify, hoping that it was one of those hoaxes that seems to infest my Facebook.

It wasn’t.

I cried.

I’m still crying.

When I was a kid I would watch Star Trek every chance I could get. Spock was my hero. I wanted to be a Vulcan and if I couldn’t be one I wanted to marry one. He was my first crush and my heart still skips a beat when I hear a clip of his voice. (sorry, Hubby)

When I was a child I had no real control over my emotions. The slightest change in routine would leave me in tears and the slightest upset would set off temper tantrums that I could not stop. I wanted to stop, don’t get me wrong. I wasn’t a spoiled brat like everyone assumed I was.  I hated crying, I still hate to cry, I just couldn’t help it.

I identified with Spock. He came from a logical, rational race that had suppressed all of their emotions and that was what he tried to be. When his emotions did surface, it was always explosive and unstable. That was how I felt: constantly trying to remain calm and but still exploding into a teary mess.

With Spock in mind, I practiced breathing exercises and relaxation techniques and any other kind of emotional control I could learn or figure out. I still cry at the drop of a hat, but it is less taxing and easier to stop now. Between my mother’s patient coaching and Spock’s influence I can now go several days, if not weeks, without crying, which is a big deal.

So thank you, Leonard Nimoy. You had no idea who I am or what you did for me, but I appreciate it still and I’m going to miss you.
